Grilled Corn on the Cob w/Spicy Rub and Lime
Mix together:
2 tsp cumin
2 tsp chili powder
1 tsp chipotle powder
1 tsp pepper
1 tsp smoked paprika
1 tsp salt
6 ears corn, shucked and cleaned
1/2 cup sour cream
Lime wedges
Grill the corn over medium heat until uniformly brown, about 6-8 minutes.
At the table, serve the spice mix to sprinkle over the corn, top with a dollop of sour cream and a wedge of lime. all ingredients together. Serve with tortilla chips or as a condiment over grilled fish.
